Last week I experimented a bit in the kitchen and this amazing coconut-peach protein cake came out. It was absolutely delicious, super healthy and rich in protein. Read on for the recipe!
So I love coconut and I love peach… So why not put them together in a cake right??
I actually started from the banana bread recipe from healthyfans and slightly changed it to fit the recipe I had in mind!
What do you need?
– 3 ripe bananas
– 3 large eggs
– 9 dried apricots
– 140g of ultra fine oats
– 2 scoops coconut whey protein
– 1 tablespoon baking powder
– grated coconut to your likings, I added a few tablespoons in the batter and one on top after baking.
– 2 peaches or nectarines
mix up the eggs, bananas and dried apricots. Stir together the coconut whey, baking powder, shredded coconut, and ultra-fine oats. Add the liquid ingredients to the dry ones and stir well. Slice up one and a half of the nectarines in small blocks and stir them in the cake batter. Spray your baking tin with baking spray and pour in the batter, after that add the remaining half peach in small slices on top and maybe some shredded coconut. Bake in the oven on 180°C for 50minutes, or until a toothpick comes out dry when you stick it in. Let the cake cool on a rack and sprinkle some more shredded coconut on top.
PS: The cake is even more delicious if you heat it up in the microwave for like half a minute or until it is warm, depending on your microwave, with a little Nutella on top, pure heaven! (don’t heat it up too long, because it’ll become dry then!)
